Beans and rice in Pita pockets

Ingredients:

brown rice
your choice of beans ( I used chili beans and it tasted alright but just red beans would be best ! )
Ring bologna sliced and cut in half
Sweet corn 
Wheat Pita pocket
Lettuce 

Preparation:

Cook rice as directed
cook bologna 
add corn to bologna to heat through
add cooked beans to bologna and corn to heat through
Combine with Rice
You can eat it just like this or you can serve it in Pita pockets with  little lettuce. 
*You could also put in a baking dish and put a cornbread mix on top. Then cook until cornbread is done.



Meatball Pizza Bake

Ingredients:

Heart smart bisquick
meatballs about 12 or so
Chunky tomato sauce ( I use spaghetti sauce )
Red onion
Green pepper
Yellow Pepper
Shredded cheese ( I used Fat free cheddar )

Preparation: 

Preheat Oven to 400 degrees 
 Cook meatballs
Cook veggies
Make desired amount of bisquick batter
spread in pan 
Add sauce
Add meat balls and veggies 
add cheese

Cook for about 25 minutes until batter is cooked through

Spinach chicken Pizza

Ingredients:

Spinach Garden tortilla
Spinach dip ( I use tostito spinach dip )
Mushrooms ( baby bella, cleaned and Sliced )
Chicken Breast strips ( I like to buy the frozen strips with the fajita  seasoning )
Fat free Shredded Mozzarella cheese
Fat free cheddar cheese

Preparation: 

Preheat oven to 400 degrees 
Spread Spinach dip on tortilla
Place Thawed (cooked ) chicken strips on
Place Mushroom on
Add Cheese
Cook for 15 minutes or so.

Makes 8 small servings
